The Edmunds County Special Foods Contest was held on Wednesday, July 18 at the 4-H Building in Ipswich.
Members were given 90 minutes to prepare their recipes. They were judged on food preparation, technique, nutrition, creating an attractive place setting, and food quality.
Receiving purple ribbons were Beginners Lincoln Beyers for his Tuna Salad Sandwiches and Kathryn Kilber for Mama Marian's Hotdish, and Junior Hannah Beyers for her Sausage and Cheese Biscuits.
Tuna Salad Sandwiches
Lincoln Beyers
2 cans tuna
½ cup Mayo
1 tsp lemon juice
1 T chopped pickle
¼ cup cheese
¼ tsp salt
¼ tsp pepper
Directions:
1. Mix all ingredients together.
2. Spread mixture onto buns.
Mama Marian's Hotdish
Kathryn Kilber
1 lb. ground beef
1 can tomato soup
2 T ketchup
¼ tsp onion flakes
8 oz. wide egg noodles
2 T brown sugar
2 T mustard
¼ tsp pepper
Directions:
1. Brown the ground beef, add in seasonings, and drain the grease.
2. Boil noodles.
3. Preheat oven to 350º.
4 Mix boiled noodles, ground beef, tomato soup, ketchup, and mustard in hotdish bowl/container.
5. Put hot dish in oven for 20 minutes covered with tin foil.
6. Take hot dish out of oven, sprinkle cheese on, recover, and put back in oven for 10 minutes.
7. Take hotdish out of oven. Let cool for 1-2 minutes before serving.
Sausage & Cheese Biscuits
Hannah Beyers
1 ¾ cup Bread flour
¼ cup butter
3 T sugar 1 egg
2 tsp baking powder
¾ cup milk
½ tsp salt
1 cup grated
cheddar cheese
½ pound Jimmy Dean
Sausage
Directions:
1. Brown the sausage.
2. Mix dry ingredients together in glass mixing bowl.
3. Cut in the butter, after mix in your eggs and milk until you have a dough. Mix in the cheese and sausage.
4. Using a 2 inch cookie scoop put your dough on a greased cookie sheet. Bake at 425º for 10-12 minutes or until brown and crisp on the top.
5. Makes about 24 biscuits.
